Blue Shrimp Tacos w/ Homemade Torillas

- 1 lb easy peel Mexican blue shrimp, peeled
- 1 avocado, diced
- 2 tomatoes, diced
- 1 red pepper, diced
- 1 head of lettuce, shredded
- 1/4 cup fresh cilantro, chopped
- 2 limes, cut into wedges
- Salt and pepper, to taste
- Corn tortillas
For the Tortillas:
- 2 cups of masa harina
- 1 tsp salt
- 1 1/2 cups of warm water
Start by making the tortillas, in a large bowl mix together the masa harina, salt, and warm water. Knead the dough until it becomes smooth and pliable. Cover the dough and let it rest for at least 30 minutes.
Divide the dough into small balls and press them out into thin circles using a tortilla press or a rolling pin.
Heat a skillet over medium-high heat and cook the tortillas for 1-2 minutes per side, or until they are soft and pliable.
