Cooking Guide: Snow Cod - PrimeFish Seafood Co.

Cooking Guide: Snow Cod

Each package contains one 6 oz fillet of Snow Cod, a premium Atlantic cod raised in the cold, clear fjords of Norway. Every fillet is flash-frozen at peak quality to preserve its snowy-white color and firm, even flake.

The product arrives frozen. Thaw the Snow Cod completely before cooking. This guide uses a pan-sear and oven-finish method, which gives the fillet a golden crust while keeping the inside moist and tender.

Thawing Instructions

Line a large plate or tray with paper towels.

Remove the frozen Snow Cod fillets from their packaging.

Arrange them on the prepared plate in a single layer, with space between the pieces.

Cover loosely and refrigerate for 8–12 hours (overnight), or until completely thawed.

Once thawed, pat the fillets dry with a clean paper towel.

Note: Thawing time may vary depending on your refrigerator temperature and the number of fillets being prepared.

⚠️ Food Safety Reminder: Never thaw fish at room temperature. Keep it refrigerated until you are ready to cook it.

Cooking Instructions

Pan-Sear and Oven Finish

Preheat the oven to 450°F.

Pat the thawed Snow Cod dry, then season both sides with salt and pepper.

Add 3 tablespoons of oil to an oven-safe pan over medium heat. Let the pan heat for about 5 minutes. It should be very hot before the fish goes in.

Place the cod in the pan and sear the first side for 2½ minutes.

Flip the cod, cook for another 30 seconds, then turn off the heat.

Add 2 knobs of butter to the pan, then transfer the entire pan to the oven.

Bake for 10–12 minutes, then check the thickest part of the fish. The cod is ready when it reaches an internal temperature of 145°F.

Serving Instructions

Transfer the cod to a plate and drizzle with olive oil.

Finish with a squeeze of fresh lemon and chopped fresh parsley.

Serving Suggestions

Spoon the browned butter from the pan over the fillet before serving.

Pair with roasted potatoes, steamed asparagus, or a crisp green salad.

Serve over rice, risotto, or buttered pasta for a complete meal.

Enjoy it with Prime Butter and Prime Blend Seasoning for extra flavor.

Important Notes

Get the Pan Hot: A fully preheated pan gives the cod a golden crust and helps keep it from sticking.

Pat It Dry: Removing surface moisture before seasoning helps the fish sear instead of steam.

Use an Oven-Safe Pan: The pan goes straight from the stovetop into a 450°F oven, so avoid pans with plastic or wooden handles.

Check the Temperature: Use an instant-read thermometer in the thickest part of the fillet. Remove the cod as soon as it reaches 145°F so it stays moist and flaky.

Serve Immediately: Snow Cod has its best texture and flavor when served right out of the oven.

Storage and Consumption

Keep thawed cod refrigerated at 40°F or below and cook it within 1–2 days. Do not refreeze the product after it has been completely thawed.

Store any cooked leftovers in an airtight container in the refrigerator and enjoy within 2–3 days.
