Ōra King Salmon is sustainably raised in the crystal clear waters of New Zealand’s Marlborough Sounds. The water flowing from Te Waikoropupū Springs is some of the clearest, cleanest water in the world. Each step of the King salmon journey is one of care and consideration. Frozen vs. Fresh: Freezing seafood properly like we do ensures the quality of our product better than the majority of fresh seafood out there. Most “fresh” fish you will find is frozen at some point. Our seafood is flash frozen shortly after catch, when the product is at peak freshness. This not only locks in flavor and nutrients, but ensures the highest quality product possible.
Orders ship Monday-Wednesday. Shipping takes 1-2 days. The order cutoff time is 12pm EST for 1-2 day shipping. All orders arrive frozen.
We do not ship on holidays, the eve of a holiday or in inclement weather.
Packing Information: We ship your seafood in a neatly packed reusable box with dry ice. Be careful not to touch the dry ice with your bare skin!
Storing Information: As soon as your order arrives, place your seafood in the refrigerator for use within 2-3 days or freeze for later use. Do not refreeze after thawing.
Thawing: Remove from plastic packaging. Cover and refrigerate overnight. Once thawed, consume within one to two days. For faster thawing place packaged fish in a bowl filled with cold water and let sit for 30 minutes to 1 hour.
Sear Roast: Preheat oven to 400°F. Bring your Ōra King portion to room temperature. Remove salmon from it packaging and pat the fish dry with a paper towel. Season both sides of the fish with salt and pepper. Heat an oven-safe skillet with one tablespoon of cooking oil or butter on medium-high heat. Place your portion in the pan skin side down and sear for 1-2 minutes (longer for crispier skin). Once seared, finish off in the oven for 4-5 minutes. Squeeze lemon over fish and serve.
Pan Sear: Bring your Ōra King portion to room temperature. Remove salmon from its packaging and pat fish dry with a paper towel. Season both sides of the fish with salt and pepper. Heat a skillet with one tablespoon of cooking oil or butter on medium-high heat. Place your portion in the pan skin side down and sear for 1-2 minutes (longer for crispier skin). Flip the portion over and cook for another 1-3 minutes. Squeeze lemon over fish and serve.
Baked: Preheat oven to 400°F. Remove the package from your portion and place in a baking sheet. Bake for 10-12 minutes or until you have reached your desired temperature.
Grilled: Heat a stovetop or outdoor grill to medium heat (450°F-550°F). Coat the flesh sides of the Ōra king portion with salt and season with salt and pepper. Place the salmon on the hot grill skin side down and close the lid. Grill for 6-8 minutes. Once the fish is lighter in color flip it over and cook for another 2-4 minutes with the lid closed. For medium rare the fish should have an internal temperature of 130°F. Let rest for a minute or two after cooking and serve with lemon.
