Our skinless, boneless Chilean Seabass portions are fished in the coldest, cleanest waters of the Antarctic Ocean and flash frozen at sea to preserve their melt -in-your-mouth flavor. Their portions are served in the finest restaurants around the world and fished in compliance with The National Oceanic and Atmospheric Association (NOAA) and The Commission for the Conservation of Antarctic Marine Living Resources (CAMLAR) ensuring adherence with quotas, location of catch and sustainability parameters.
Frozen vs. Fresh: Freezing seafood properly like we do ensures the quality of our product better than the majority of fresh seafood out there. Most “fresh” fish you will find is frozen at some point. Our seafood is flash frozen shortly after catch, when the product is at peak freshness. This not only locks in flavor and nutrients, but ensures the highest quality product possible.
Orders ship Monday-Wednesday. Shipping takes 1-2 days. The order cutoff time is 12pm EST for 1-2 day shipping. All orders arrive frozen.
We do not ship on holidays, the eve of a holiday or in inclement weather.
Packing Information: We ship your seafood in a neatly packed reusable box with dry ice. Be careful not to touch the dry ice with your bare skin!
Storing Information: As soon as your order arrives, place your seafood in the refrigerator for use within 2-3 days or freeze for later use. Do not refreeze after thawing.
Thawing: Place fish in refrigerator overnight; or quick thaw by placing packaged fish in a bowl filled with cold water. Change water every 15 minutes for 1 to 1 1/2 hours, or until fully thawed. Thawed fish should be consumed within 2 days.
Sear Roast (Recommended): Thaw fish. Preheat oven to 375°F. Remove fish from packaging and pat fish dry with a paper towel. Season both sides of the fish with salt and pepper. Heat an oven-safe skillet with 2 tsp. of oil on medium-high. Place the sea bass in the pan and sear on one side until golden brown (3-5 min). Once browned flip fish over and finish off in the oven for 7-10 minutes or until internal temperature reaches 145ºF.
Pan Sear: Thaw fish. Remove fish from packaging and pat fish dry with a paper towel. Season both sides of the fish with salt and pepper. Heat a skillet with 2 tsp. of oil on medium-high heat. Place the sea bass in the pan and sear each side for 5-7 minutes or until internal temperature reaches 145ºF.
Steam: Thaw fish. Season both sides of the fish with salt and pepper. Add 1 inch or more of water into a steamer, cover and bring to a boil. Place the fish in the steamer and cook for about 10 minutes or until internal temperature reaches 145ºF.
Grill: Thaw fish. Remove fish from packaging and pat fish dry with a paper towel. Heat a stovetop or outdoor grill to medium heat (400°F) . Coat fish in oil and season with salt and pepper. Grill for 5-7 minutes on each side or until internal temperature reaches 145ºF.
