Our Cobia is sourced from Open Blue — the largest open ocean aquaculture in the world. The fish are raised eight miles off the shore of Panama in innovative marine nets, while the swift currents of the open ocean produce healthier, cleaner fish with little impact on the environment. The fish are able to grow naturally, never seeing the same water twice. Open Blue has a clear vision to feed current and future generations in harmony with the ocean. They believe that a healthy and sustainable environment means a healthy and sustainable fish, and keeping their waters pure and pristine is key in their mission. Most “fresh” fish you will find is frozen at some point. Our seafood is flash frozen shortly after catch, when the product is at peak freshness. This not only locks in flavor and nutrients, but ensures the highest quality product possible.

Packing Information: We ship your seafood in a neatly packed reusable box with dry ice. Be careful not to touch the dry ice with your bare skin!
Storing Information: As soon as your order arrives, place your seafood in the refrigerator for use within 2-3 days or freeze for later use. Do not refreeze after thawing.
Thawing: Refrigerate the package of Cobia overnight. For faster thawing place the Cobia package in a bowl with cold water replacing the water every 10 minutes until fish is thawed. This method should take anywhere from 20 minutes to 1 hour.
Broiled: Thaw fish. Preheat your boiler. Brush an oven safe pan with oil and place Cobia portions in the pan. Season with salt and pepper. Broil the fish on one side for 5 minutes. Turn the fish over and broil for another 5 minutes on the other side. The Cobia should be opaque when finished with an internal temperature of 145°F.
Pan Sear: Thaw fish. Heat a pan on medium-high heat. Pat the Cobia dry on both sides and season with salt and pepper. Add cooking oil to the pan until hot. Place the fish in the pan and sear on both sides for 3-5 minutes. The Cobia should be opaque with a golden brown crust when finished and an internal temperature of 145°F.
Baked: Thaw fish. Preheat oven to 450°F. Brush a baking dish with oil. Pat Cobia dry on both sides and season with salt and pepper. Place the fish in the baking dish and bake until golden brown (12 to 15 minutes). The fish should have an internal temperature of 145°F when finished.
Grilled: Thaw fish. Preheat grill to around 400°F. Brush the grill grates with oil to prevent the Cobia from sticking. Season the fish on both sides with salt and pepper. Lay the Cobia on the grill and cook for 5 minutes per side. The fish should have an internal temperature of 145°F when finished.
