Our trusted source for scallops is Wild Atlantic Seafood Inc - committed to bringing the highest quality, sustainable seafood with no additives. Their scallops are harvested by the Karen Elizabeth fishing vessel from the Delmarva Peninsula to the Canadian border. They triple wash the scallops in cold, clear Atlantic Seawater and freeze them at sea.
Dry vs. Wet: Our Karen Elizabeth scallops are “dry”. Dry scallops are not treated with additives and/or water unlike “wet” scallops. With wet scallops, you not only pay for added water weight but also lose taste and have trouble browning when cooking. Dry scallops are sweeter, fresher tasting and better for cooking.
Frozen vs. Fresh: Freezing seafood properly like we do ensures the quality of our product better than the majority of fresh seafood out there. Most “fresh” fish you will find is frozen at some point. Our seafood is flash frozen shortly after catch, when the product is at peak freshness. This not only locks in flavor and nutrients, but ensures the highest quality product possible.

Broil: Thaw scallops. Preheat your boiler. Brush an oven safe pan with oil and place scallops in the pan. Season with salt and pepper. Broil the scallops for 4-5 minutes or until internal temperature reaches 125ºF.
Pan Sear: Thaw scallops. Heat a pan on medium-high heat. Pat the scallops dry and season with salt and pepper. Add cooking oil to the pan until hot. Place the scallops in the pan spaced evenly and sear on both sides for 2-3 minutes or until internal temperature reaches 125ºF.
